Pesto sauce is delicious and the avocado on this one it makes all the difference. It is smooth and rich. A real treat!
Ingredients:
400g penne pasta
66g fresh basil
1/2 cup pine nuts
3 small avocados, pitted and peeled
1 lime juice
3 cloves of garlic
1/2 cup olive oil
Salt
Black pepper
Method:
1 - Cook the pasta as per the package instructions
2 - When the pasta is almost done blend all the ingredients on a food processor and mix with the pasta when ready.
Serve while still hot. Enjoy!!!
